The Macallan is globally esteemed for its exceptional single malt whiskies, reflecting a dedication to the craftsmanship of wood and spirit since 1824. Designed by the renowned firm Rogers Stirk Harbour + Partners, the distillery is discreetly embedded within the ancient Scottish hills, echoing the contours of the natural landscape. To celebrate its 200th anniversary, David Thulstrup designed TimeSpirit, an intimate 24-seat restaurant honouring heritage, place, and experience.
Local and natural materials feature throughout the space, forging a thoughtful connection to the surrounding Scottish landscape, the artisanal whisky making process, and the restaurant’s Spanish cuisine curated in collaboration with the renowned El Celler de Can Roca. Every detail within TimeSpirit creates an immersive experience where architecture, materiality, and gastronomy converge in quiet celebration of The Macallan’s bicentennial legacy.
With an open kitchen at its heart, the interior blends with the undulating hills of Speyside, creating a fluid connection between the landscape and the culinary experience. The ARV Collection by David Thulstrup defines the space with a refined yet welcoming atmosphere. Crafted with attention to detail, the furnishings are thoughtfully chosen for their comfort, durability, and enduring beauty.

For TimeSpirit, Thulstrup selected the fumed oak ARV Tables, complemented by bespoke ARV Chairs upholstered in his own design of Sørensen’s Flux leather. The material palette is both tactile and timeless, balancing sophistication with warmth—inviting guests into a space where every element tells a story of care, craft, and legacy.
